The sesame oil obtained by cold pressing has a light aroma, lighter color than hot pressing sesame oil, and higher colloid impurity content, acid value, and peroxide value than hot pressing sesame oil. It is suitable for cooking oil and high-quality salad oil. Hot pressed sesame oil bakes the raw materials and extracts sesame oil with the help of a hydraulic oil press. The sesame oil can be used as a flavoring oil with strong aroma and high oil yield. The residual oil rate in Youbing (Deep-fried round and flat dough-cake) can be reduced to an appropriate range and the production efficiency is fast.

The working principle is to use external mechanical forces to squeeze oil out of the oil material. The main physical changes that occur during the process are material deformation, oil separation, frictional heating, and water evaporation. During pressing, the internal and external surfaces of the pressed material particles are squeezed tightly under the pressure, resulting in two different processes of the liquid part and gel part, namely, the oil is squeezed out of the squeezed material gap and the squeezed material particles are deformed to form a hard Youbing (Deep-fried round and flat dough-cake).
